<p>Chef Jose Mendoza takes the California bistro concept to another level, using items grown in the rich
Temecula Valley to create a menu that is both inspiring and inviting. This
extends not only to the numerous vegetarian dishes available, but to the
hand-crafted cocktails infused with local fruits and herbs. The Lobby Bar’s
atrium location and versatile menu that includes dessert specialties from
Pechanga’s in-house bakery make for a satisfying dining experience.</p>
As the head chef of Pechanga’s new Lobby Bar, Chef Jose Mendoza oversees the creation of the
culinary delicacies for the resort’s newest dining option. Located in the
atrium area of Pechanga’s $300 million expansion, the Lobby Bar specializes in serving
fresh, locally sourced ingredients from Temecula-area and regional farms. This
new dining offering gives Pechanga guests a choice of 20 restaurants and bars
to satisfy any craving or taste.
A native of Valley Center in San Diego County, Chef Jose brings more than 10 years of professional
cooking and restaurant management experience to Pechanga. He worked in Pechanga’s culinary team back in 2012, left for Las Vegas to broaden his culinary skills for the likes of renowned chefs Shawn McClain in Sage at the Aria and Michael Mina and his talented staff at his popular restaurant inside the Bellagio. In 2014, Mendoza took those skills to Hank’s Fine Steak &
Martinis at the Green Valley Ranch resort in Henderson, Nev., where he served
as executive chef. Now back at Pechanga, Chef Jose has created an entirely new
menu with exciting tastes and ingredients for Pechanga’s newest culinary
