Chef Ronnel Capacia
Ronnel Capacia knew very early that the kitchen was his future. The native of Guam would often spend time at family gatherings helping his mother in the kitchen while his brothers played outside. Then, he gravitated to part-time jobs at local restaurants while in high school, then to Pechanga Resort Casino as a busser in the employee cafeteria. This motivated Capacia to simultaneously attend the San Diego Culinary Art Institute, which in turn, carried the hard-working Capacia into and through various positions at the resort.
The current head chef at Journey’s End restaurant since 2017 and Pechanga’s newest restaurant, the Coveside Grill, Capacia is a model of perseverance who worked his way through a variety of increasingly responsible positions at the resort. He built his resume at Paisano’s Italian Restaurant, then as a line cook and sous chef at the AAA Four Diamond Great Oak Steakhouse before becoming the head chef at Kelsey’s in 2014.
